Abstract

Introduction. In Ukraine, as in the rest of the world, acute intestinal infections are a major medical problem and occupy a special place among infectious diseases and their prevalence is second only to influenza and SARS. Outbreaks of acute intestinal infections and acute food poisoning among civilians and military personnel are caused by infections with pathogenic microorganisms and helminth eggs, which can occur during cooking, at all stages of production, processing, transportation and sale.

The purpose. Research and analysis of the causes and factors of occurrence and spread of infectious diseases related to the nutrition of servicemen according to the Product Catalog and the principle of Product Catalog  outsourcing.

Materials and methods of research. The materials for the study of the main causes of outbreaks and spread of infectious diseases of the intestinal group were acts of inspections of food organization in military units of the 10th regional sanitary-epidemiological department of the Command of medical forces of the Armed Forces of Ukraine, annual reports for 2016-2020. Research methods - analytical, bibliosemantic, mathematical modeling, systems analysis.

Results. In the course of our own research, the main causes of outbreaks of acute intestinal infections and food poisoning among the personnel of military units in the territory of responsibility of 10 RSED for 2016-2020 were identified.Information on each outbreak in the military teams of the Kyiv, Chernihiv and Sumy garrisons was collected and analyzed, the reasons and factors that contributed to their occurrence were identified. During the study period, specialists of the Sanitary and Epidemiological Service of the Armed Forces recorded and eliminated 30 outbreaks of acute intestinal infections and food poisoning among servicemen. Between 2016 and 2020, as a result of outbreaks of acute intestinal infections and food poisoning, about 890 servicemen (90% of whom were conscripts / lyceum students) lost their combat readiness within 14 days. In 2016, 4 outbreaks of acute intestinal infectious diseases related to foodborne transmission were registered, in 2017 - 7, in 2018 violations of sanitary norms and rules at food facilities led to 13 outbreaks of acute intestinal infections and food poisoning, in In 2019 - 5, in 2020 - 1 outbreak.

Conclusions. A detailed study of each outbreak revealed that most of them were registered as a result of undetected bacteriocarriers of St.aureus among cooks and canteen workers (13 of the 30 outbreaks studied), failure to observe personal hygiene measures by food workers (10), violation of sanitary requirements during the preparation and storage of ready meals in soldiers 'and cadets' canteens (3), low-quality rodent control measures in vegetable storages (5 out of 30), the presence of canteen carriers of opportunistic bacteria of the genus Proteus and genus Citrobacter (3 of 30).
